Scrumptious Shrimp



Ingredients:

1 (8-ounce) bottle Italian Dressing
1 cup chili sauce
2 tablespoons corn syrup
2 lbs. large shrimp, shelled and cleaned
4 lemons, cut into wedges

Directions:

In large bowl, blend Italian Dressing with chili sauce and corn syrup; add shrimp. Cover and marinate in refrigerator 2 hours, turning occasionally. On skewers, alternately thread shrimp and lemons. Grill or broil, turning and basting frequently with remaining marinade, 15 minutes or until shrimp is done. Serve.

Chocolate Coca-Cola Cake


Cake Mix:

1 cup Coca Cola
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Frosting:

1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar

In a saucepan, mix Coca Cola, oil, butter, and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting. (Note: Prepare the icing during the last 10 minutes of baking so that it is ready to spoon onto the warm cake.) Serve.

Sausage, Egg, and Hash Brown Casserole

Ingredients:


1 lb. sausage
9 large eggs, slightly beaten
3/4 cup milk
4 tablespoons melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese


Preparation:

Preheat oven to 350°F.

Break up sausage meat and discard casings, if desired. Layer raw sausage on bottom of a well buttered 9"x13" pan. Add milk and melted butter to beaten eggs and pour over sausage.

Add hash browns and top with shredded cheese.

Bake for one hour.

Makes about 4 servings.

Easy Peasy Peach Cobbler

Ingredients:

1/2 cup butter

1 cup all-purpose flour
2 cups sugar, divided
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 cups fresh peach slices
1 tablespoon lemon juice
Ground cinnamon or nutmeg (optional)


Preparation:

Melt butter in a 13- x 9-inch baking dish.
Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir). Sprinkle with cinnamon, if desired.
Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.

Strawberry Jalapeno Margarita


Ingredients:
  • 2 Tbs. strawberry jam
  • 1/3 c. Tanteo jalepeno tequila
  • 1/2 c. simple syrup ( I totally cheated and did store-bought, but make your own by combining equal parts sugar and water in a saucepan over medium-low heat until sugar has dissolved.)
  • 1/4 c. lime juice
  • ice
  • jalepeno for garnish
Instructions:
1. Combine jam, tequila, simple syrup, lime juice and ice in a cocktail shaker and shake vigorously for 20 seconds.
2. Strain into glass over fresh ice.  Add sliced jalepeno for garnish

Ingredients: 3 large ice cubes 1 ½ oz. tequila ¾ oz. ginger liqueur 2 oz. fresh pink grapefruit juice 1 oz. fresh lime juice Slice of grapefruit Directions: 1. In shaker with ice, combine tequila, ginger liqueur, grapefruit & lime juice 2. Shake very well 3. Strain into chilled martini glass 4. Garnish with slice of grapefruit

Directions:
Pour grenadine and creme de menthe into shot glass, each about 1/4 of a shot in amount, then fill the remaining half of the shot with Bacardi 151 rum. With a match, light the shot and drink it with a straw.
