Gluten-Free Buttermilk Doughnuts


This is one of the best gluten-free doughnut recipes ever!

Ingredients:

For Doughnuts -
Vegetable oil for deep frying
1 egg
1 cup buttermilk
2 tablespoons butter, melted
2 1/2 cups gluten-free all-purpose rice flour blend
1/2 cup granulated sugar
1/4 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon xanthan gum
1/2 teaspoon gluten-free baking powder

For Chocolate Glaze -
1/2 cup powdered sugar
1 tablespoon unsweetened baking cocoa
1 tablespoon butter, melted
3 to 4 teaspoons milk

Directions:

1. In deep fryer or 2-quart heavy saucepan, heat 2 to 3 inches oil to 375°F.

2. To make Doughnuts, in large bowl, beat egg, buttermilk and 2 tablespoons melted butter with whisk until blended. In medium bowl, stir remaining doughnut ingredients. Slowly fold dry ingredients into egg mixture; coat hands with flour blend, and mix with hands, if necessary. Cover and let dough rest 15 minutes.


3. Meanwhile in small bowl, stir together Chocolate Glaze ingredients, stirring in enough milk until smooth and desired glaze consistency. Cover; set aside while frying doughnuts.


4. Sprinkle flour blend on work surface. Roll out dough on surface to 1/2-inch thickness. If dough is sticky, coat hands and rolling pin with flour blend. Cut dough with 3-inch round doughnut cutter. Fry doughnuts and holes in hot oil about 2 minutes, turning once, until golden brown. Drain on paper towels. Dip top of each doughnut and holes into glaze. Serve warm.

Cheesy Biscuits


Baking biscuits doesn't get easier or better tasting than this!

Ingredients:

1/2 cups Bisquick
3/4 cup buttermilk
3 Tbps sugar
1/4 tsp vanilla
1 cup cheddar cheese, shredded

1. Preheat oven to 425.

2. Stir together all ingredients just until combined.
4. Scoop into a mini muffin pan coated with cooking spray.
6. Bake 12-15 minutes, until golden.

Cheesy Ham Biscuit Pull Aparts




This is divine cheesy decadence! This is my absolute favorite breakfast biscuit, but it works well with any meal!

Ingredients:

1 (16.3 oz) Pillsbury Grands Flaky Layers Biscuits (I prefer the buttery flavor).
1 egg
2 tablespoons milk
3/4 cup diced ham
1/4 cup thinly sliced green onion
1/2 cup shredded cheddar
1/2 cup Monterey Jack cheese
1/2 teaspoon granulated garlic

Directions:

Heat oven to 350 degrees. Spray a 11 x 7 or 12 x 8 glass baking dish with cooking spray. In a large bowl, beat egg and milk with a wire whisk until smooth.

Separate dough into individual biscuits and cut each biscuit into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in ham, cheese, onions and granulated garlic. Spoon mixture into prepared dish, arrange biscuit pieces in a single layer.

Baked at 350 for 23 – 25 minutes or until golden brown. You can either cut into squares or just pull them apart.

Cinnamon Sugar Coffee Cake Muffins


These are a family favorite that are truly hard to beat!

Ingredients:

For the Muffin:
1-¾ cup flour
1-½ teaspoon baking powder
½ teaspoon salt
½ teaspoon nutmeg
½ teaspoon cinnamon
⅓ cup oil
¾ cup granulated sugar
1 egg
¾ cup milk

For the Cinnamon Sugar Topping:
1/4 cup butter, melted
1/3 cup granulated sugar
1 Tablespoon cinnamon
Directions:

1. Preheat the oven to 350ยบ. Whisk together the flour, baking powder, salt, nutmeg, and cinnamon.
2. In a separate, large bowl, combine oil, sugar, egg and milk.
3. Add dry ingredients and stir only to combine.
4. Coat your muffin pan well with nonstick cooking spray and divide the batter evenly among the cups.
5. Bake at 350 degrees for 15-20 minutes.
6. Run a knife around the sides of the muffin and shake them out of the pan while still hot.
7. Melt the butter in a bowl.
8. Combine the white sugar with the cinnamon in another bowl.
9. Dip muffins in butter, then into the sugar/cinnamon mix.

Bacon Cheddar Beer Bread


Of all the breads one can bake, this is my very favorite!

Ingredients:


3 cups self rising flour
3 tablespoons sugar
1 12oz bottle of beer
1 cup cooked bacon, diced
1 cup sharp shredded cheddar cheese
1/4 cup melted butter

Directions:


1. Mix flour, sugar and beer together till well combined. Fold in bacon and cheese.
2. Pour batter into a greased loaf pan and bake in a preheated 375 degree oven.
3. Bake for 45 minutes, pour melted butter over top of loaf and bake for another 10 minutes.
4. Remove from oven, let cool until bread is easy to remove from loaf pan.
5. Serve warm.

Cinnamon Crescent Rolls


These are so very yummy and so easy to make! My family absolutely adores them!

Ingredients:

Rolls -
2 cans refrigerated crescent rolls
1 stick butter, softened
½ cup white or brown sugar
1 tablespoon cinnamon

Glaze -
½ cup powdered sugar
1 teaspoon vanilla
2 tablespoons milk

Directions:

1. Heat oven to 350°F. In small bowl, combine butter, sugar and cinnamon; beat until smooth. Take dough out of roll and lay triangles on cookie sheet.
2. Roll up each, starting at the widest side, as you would normally do for crescent rolls.
3. Place each cinnamon filled crescent roll onto a baking sheet. Bake at 350°F. for 10 to 15 minutes or until golden brown.
4. In small bowl, blend all glaze ingredients, adding enough milk for desired drizzling consistency.
5. Drizzle over warm rolls.

Banana Bread


This Banana Bread recipe is the easiest I've ever found and the bread comes out perfect every time! This is the perfect bring-along for any party!

Ingredients:

1 1/4 cup ripe bananas, mashed
1 teaspoon lemon juice
1 3/4 cup flour
1 cup sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup brown sugar, packed
2 eggs
1/3 cup buttermilk
1/4 cup oil
1/4 cup apple sauce
2 teaspoons vanilla extract
1 cup chopped walnuts or chocolate chips, optional

Directions:

1.  Preheat oven to 350 degrees and prep a loaf pan by greasing it.
2.  In a small bowl, use a fork to finely mash bananas (I used 3). Stir in lemon juice and set aside.
3.  In a large bowl, sift flour, sugar, baking soda and salt together. Stir in brown sugar.
4.  In another bowl, use a whisk to combine eggs, buttermilk, oil, applesauce and vanilla extract.
5.  Pour your liquid ingredients and mashed bananas into the dry ingredients. Use a wooden spoon to stir just until combined.
6.  Stir in walnuts or chocolate chips.
7.  Bake for 1 hour, check center with toothpick. Bake additional if needed.
