Strawberry and Coconut Frosted Cake


This is one of my favorite recipes ever and it comes out perfect every time!


Ingredients for Cake:

1 pkg white cake mix
1 pkg strawberry jello
1 tbsp flour
4 tsp sugar
3/4 cup butter
4 eggs
1/2 cup water
1/3 cup finely diced strawberries


Directions:

1. Combine cake mix, jello, flour, sugar in a bowl, mix thoroughly with a wire whisk.
2. Add softened butter and mix well
3. Add eggs to the mixture, one at a time, while continuing to whisk.
4. Add water and strawberries and mix well.
5. Divide the batter into 3 cake pans that have been greased and floured.
6. Bake at 350 for 25-35 min or until toothpick is clean and the cake is pulling away from pan edges.
7. Cool in pans on wire racks for 10 minutes and then remove cakes from pans and allow them to continue until ready for frosting.

Ingredients for Frosting:

1 block cream cheese
2 sticks butter
1 1/2 lb powdered sugar
1 tub cool whip
pinch of salt
1 tsp vanilla
1/2 can evaported milk
1 1/2 cup coconut
sliced strawberries

Directions:

1. Combine softened cream cheese and butter and beat until it is soft and pliable with no lumps.
2. Add 1 box of powdered sugar, salt, vanilla, and 1/2 can milk.
3. Beat until it is well mixed and add 1/2 box powered sugar.
4. Add cool whip and a few drops of red food coloring to make mixture pink in color and mix well.
5. Add 1 cup coconut and mix well.
6. Ice all three layers and including the tops and stack.
7. Sprinkle coconut and arrange slices of strawberries on the top of cake.
8. Serve.
