16 ounces hash brown potatoes
4 slices bacon, cooked crisp and crumbled
¼ cup evaporated milk
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon onion powder
1 cup shredded cheddar cheese, divided
1. Place the bacon, hash browns, milk, eggs, seasonings and ½ cup of the cheese in a bowl and mix well.
2. Divide mixture into 12 well greased muffin tins and top with the remaining cheese.
3. Bake at 375 for 20 minutes.
4. Cool until warm and serve.
